POTATO-QUINOA SALAD WITH OLIVES

Are you a fan of Mediterranean food? I am! And also a fan of salads. So I combined both and I created a yummy salad, high in protein and very nutritious. The dish is simple to prepare and very time-efficient.



 

Servings: 2-3

Preparation time: 5 minutes

Cook time: 30-35 minutes

Total time: 35-40 minutes


Ingredients:

750g halved new potatoes

1/2 red onion

Black olives

Green olives

30g rocket

30g spinach

40g quinoa

1 lemon

3 tbs apple cider vinegar

1 tsp sugar

1 tbs whole grain mustard

Pinch of salt and black pepper

Olive oil


 

INSTRUCTIONS:

  1. Preheat the oven to 220 degrees, fan setting. Weight in new potatoes and cut them on halves. Place potatoes on a large baking tray, drizzle with olive oil, pepper and salt and bake for 30-35 min until golden and soft.

  2. Meanwhile cook quinoa as instructed on the package. When cooked, set aside and prepare other ingredients.

  3. Slice red onion and add it in a separate bowl. Add apple cider vinegar, sugar and pinch of salt. Mix well and leave on the side.

  4. When potatoes are baked, add them to a bowl. Add olives, rocket, spinach, mustard and quinoa and mix all together well.

  5. When mixed through serve the salad and enjoy it warm or cold.
