ONE BOWL BANANA BREAD

Are you ready to bake THE BEST banana bread of your life? It is simply the best! I hate dry banana bread and I can promise you this one is fluffy and simply irresistible.

You only need one bowl and some healthy ingredients! And even better, it doesn't contain any flour, it's gluten and refined sugar free.


I love to have it for breakfast topped with some peanut butter and fresh fruits. It's also perfect for dessert (although it's very filling) or pre/post-workout snack!



 

Servings: 10-12 slices

Preparation time: 10 minutes

Baking time: 60 minutes

Total time: 70 minutes


Ingredients:

3 medium overripe bananas (+1 extra for final decoration)

1/4 cup oat milk

1/3 cup xylitol

1/4 cup smooth peanut butter

1/4 cup coconut oil

1 tsp vanilla extract

2 tbs flax meal

1 cup gluten free oat flour

1 cup almond flour

1 tsp baking powder

1 tsp baking soda

1/2 teaspoon sea salt

Pinch of cinnamon

1 cup vegan dark chocolate chunks (I buy Vego chocolate melts) + extra for topping

40g walnuts (optional)


 

INSTRUCTIONS:

  1. Preheat the oven to 175°C and line a baking pan with a parchment paper.

  2. Place 3 bananas into a large bowl and mash them well. Then add oat milk, xylitol, smooth peanut butter, vanilla extract, flax meal, almond flour, oat flour, baking powder, baking soda, salt and cinnamon. Mix it well.

  3. Take a cooking pot, weight in coconut oil and melt it. Once melted add it to the mixture in a big bowl.

  4. Mix all together very well and at the end add vegan chocolate chunks and optional walnuts. Mix again everything together.

  5. Pour a mixture to a baking pan, you can decorate it with extra banana and chocolate chunks and bake for 50-60 minutes until golden brown and your knife comes out clean.

  6. Once banana bread is baked, take it out of the oven and leave it in a baking pan for 15-20 minutes to cool down. Then remove it from the pan and place it on a wire rack. Let it cool down completely before slicing and serving it.

  7. The rest of it (if you manage to not eat all of it hoho) store in an airtight container up to 3-4 days or in the fridge up to 1 week.

  8. Enjoy it.
