BEETROOT ENERGY BALLS - best pre-workout snack

Beetroot is packed with essential nutrient and a great source of fibre, vitamin B9, manganese, potassium, iron and vitamin C. It also contains nitrates, which tell our blood vessels to expand and increase our blood flow. With increased oxygen circulation to our muscles we are able to perform during our workout better and for longer period of time.


They are the best pre-workout snack or morning breakfast to go. They are sweet in taste and at the same time super healthy and a real energy booster. Give them a try!


TIP: Maybe it's smart to use gloves when baking with beetroot, if you don't want to walk around with red hands for rest of the day hihi.☺️

 

Servings: 20-22 balls

Preparation time: 10 minutes

Total time: 40 minutes


Ingredients:

210g raw beetroot

12 pitted Medjool dates

130g desiccated coconut (+ extra for coating)

2 tbs dark cacao powder

1/2 tsp vanilla paste


 

INSTRUCTIONS:

  1. Peel the beets and place them in processor (you need a strong one)! Blend until the beets are completely chopped.

  2. Leave blended beetroots in blender and add dates, desiccated coconut, cacao powder and vanilla paste. Blend all together.

  3. Transfer the mixture into a bowl and create small balls from it.

  4. Take another bowl and fill it with desiccated coconut for coating. Dip each of the balls into the desiccated coconut until completely covered in coconut.

  5. Once covered with coconut, place them on a plate and put them in the fridge for min 20 - 30 minutes before serving.

  6. After you can enjoy them or store them in sealable container in the fridge up to 1 month.
